Beetroot likes loose, well-drained soil rich in organic matter such as compost. It is important that the pH of the soil is between 6-7 for the plant to develop properly. Beetroot is a cold-tolerant plant, so it can be sown in early spring or autumn. - Planting:
The beetroot seeds should be sown 2-3 cm deep, leaving a distance of 30-40 cm between the rows. When the seedlings reach a height of 4-5 cm, it is worth thinning them so that the plants are 10-15 cm apart. This provides enough space for the roots to grow. - Watering:
Beetroot requires a steady supply of water, especially during the germination period and during root development. In case of overwatering, the roots can start to rot, so it is important that the soil is not excessively wet. - Harvest:
Beetroot should be harvested when the root reaches a diameter of 5-8 cm, as this is when it is tastiest. Beets that have grown too large lose their tenderness and become woody. The young leaves are also edible and are excellent in salads or steamed.
When growing beetroot, it is important to take care of it regularly and ensure the right conditions for the plants to grow healthily and abundantly.

Beetroot goat cheese quiche recipe.
Ingredients:
250 g puff pastry
3 medium-sized beets (boiled or fried, diced)
150 g of goat cheese
3 eggs
200 ml of cream
1 tablespoon olive oil
Salt, pepper, nutmeg to taste
Fresh rosemary or thyme (optional)

Preparation: Preheat the oven to 180°C. Roll out the puff pastry and place it in a quiche mold so that the edges are also covered. Prick the dough with a fork and set aside.
