Growing up on a farm, I was shaped by a life close to animals and plants; it’s a heritage that has always been part of me. Decades of culinary experience have built on that foundation, leading me to where I am today. My professional journey began in the heart of Scottish gastronomy, with iconic places like Brig O’Doon and Hilton. The flavours and cultures of Italy, Spain, and Malta along the Mediterranean coast further enriched my understanding. Designing, equipping, and managing hotel kitchens—each project brought new insights and a deeper respect for nature’s role in what we create on the plate.
Now, I find myself in a new world—Holland—where I have the opportunity to move from balcony gardening to cultivating a real garden. The Gastrongarden is both an experimental space and a sanctuary, where everything grows in harmony with nature. From garden to table, each fresh ingredient honours the legacy I carry.

Fresh ingredients come straight from the garden to the table, simple yet profoundly touching those who taste them.
